Have you tried going up the stairs at Covent Garden station?
For me, yes i did, but my legs hurt after i fun 193 steps to exit the station.

Walk up the Monument by London Bridge, its about £3 but 200 or 300 steps up and the same coming down, I walked up twice in the last 3 years and I must say the view is well worth it!!!

The problem I find with walking / running up stairs in a tube station is the spiral nature makes me dizzy! Downhill is bearable, and I often do that regardless how deep it is if I have just missed the elevator. I don't mind running up escalators as they are straight and they are moving in the same direction which allow you to pick up speed

I've walked down and up the Covent Garden one more than once, it's good exercise! The Hampstead one - I smiled when I saw "over 300 steps" on a worn out poster - making me think if they actually counted it, but due to time constraints with my friend (at that time), I never got to climb those stairs, yet However, I don't have the confidence to run up or down stairs/escalators as fast as I used to mainly due to a weak knee after a previous dislocation.

Thing with those signs that tell you how many steps there are, is that some poor bugger had to count them and find out!
