Couple trivia here: There are only two Underground stations that have island platforms and they are Clapham North and Clapham Common both of which are on the Northern Line. The Central Line serves the most stations that doesn't have a station building meaning they're only accessible by a subway or another way

Because there are loads on the tube network.

You're right that there are loads on the tube network, most are on the subsurface lines.

There are still quite a few that are underground though, with the Piccadilly line all but 4 underground stations have island platforms (South Kensington, Holborn, Russell Square, Finsbury Park)

Where you have said "all but 4" stations on the Piccadilly Line, many of them are indeed deep level, but the platforms have corridors and concourses between them (platforms are thus separate from each other) so they do not count as island platforms. Oakwood for example, does have island platforms and is served by a deep level tube line, but the station itself is above ground.

Underground, only Clapham Common & Clapham North still remain with island platforms Golders Green has an island platform but the doors don't open on both sides Golders Green isn't exactly a single Island platform, nor is it Underground. Doors only open on both sides of Underground trains at Stratford for the Central line Westbound and Barking for the District line Eastbound I believe.

Does White City also have a platform where doors open on both sides? They do but not at the same time. Terminating trains open on the right hand side first, before closing them and opening the left. This means that those leaving the train can catch a westbound train without having to use stairs, whilst in the eastbound direction both trains departing depart without needing to use stairs to access either train.
